PANCAKE DAY!
We can’t believe it’s pancake day again, it’s really crêped up on us!
One of our favourite days of the year
We love Pancake Day here at Moving Venue, so much so that in previous years, we have hosted a Pancake Day challenge for our lovely agency friends at one of our exclusive venues, Landing Forty Two. With various challenges to complete, Shrove Tuesday has always brought out the competitive sides of our agents.
This year, we have asked our Group Head Pastry Chef, Davide Piva to give us his favourite pancake recipe so we can share it with you to ensure your pancakes are just as flipping delicious as ours…
INGREDIENTS
2 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
1 tablespoon sugar, optional
2 eggs
1 ½ to 2 cups milk
2 tablespoons melted and cooled butter (optional), plus unmelted butter for cooking, or use a neutral oil
PREPARATION
1. Heat a griddle or large skillet over medium-low heat. In a bowl, mix together dry ingredients. Beat your eggs into 1 1/2 cups milk, then stir in 2 tablespoons melted cooled butter, if you are using it. Gently stir this mixture into dry ingredients, mixing only enough to moisten flour; don’t worry about a few lumps! If the batter seems thick, add a little more milk.
2. Place a teaspoon or 2 of butter or oil onto your griddle or skillet. When butter foam subsides or oil shimmers, ladle batter onto the griddle or skillet, making pancakes of any size you like. Adjust heat as necessary; usually, the first batch will require higher heat than subsequent batches. Now the fun part – flip pancakes after bubbles rise to surface and bottoms brown, after 2 to 4 minutes.
3. Cook until the second side is lightly browned.
4. Now it’s time for the toppings! We all know about adding lemon, sugar and honey but how about trying something a bit different? One member of the Moving Venue team loves to add chunks of smashed Crunchie chocolate bars to her pancake. Another prefers a more savoury option and adds ham, cheese and wholegrain mustard. Or why not some mixed berries and lemon curd for a bit of zest!
