We recently teamed up with London's principal wholesale food markets to champion the use of local suppliers and producers in our menus.
Our brigade of chefs, and event team recently set off early one morning to visit the key sites, to all be educated in not only the seasonal produce but the atmosphere and personality of each market.
The wholesale markets, which are managed by The City of London Corporation, are made up of Billingsgate, New Spitalfields and Smithfield markets who supply a number of London's caterers, restaurants and hotels.
Billingsgate is the UK's largest inland fish market and receives daily catches from the UK coast as well as from overseas. Covering 31 acres, New Spitalfields Market is the UK's largest horticultural market specializing in fruit and vegetables. Whilst Smithfields, having traded from the same site for over a 1000 years, specializes in meat and livestock.
"It was early starts all round to see the real trading activity but educational and fun to experience it first hand," commented Steve Williams, Head Chef.
