Once again, HRH the Duchess of Cornwall presented the coveted prize and sat down to a seasonal menu full of robust autumn flavours. As usual, we combined seasonal with innovative catering techniques. Dishes included: cheddar panna cotta with a deep fried quail egg, celeriac espuma and wild rice crispies; pan fried Aberdeen Angus beef fillet, potato rosti, butternut squash puree, wild mushroom and Swiss chard galette finishing with orange carpaccio and blood orange parfait with honey roast figs.
We were very proud to once again be a part of this very special event, and congratulations to the winner Marlon James, for his novel A Brief History of Seven Killings.
